Who doesn’t love granola in the morning!? It’s a staple in our house, but one of the things I don’tlove about a lot of store bought granola is the added sugar and other unnecessary added ingredients. That’s why I decided just to make my own!
This granola is loaded with nuts for added healthy fats and protein. It has just a touch of sweetness from the honey and the spices smell SO good while this is in the oven. I also really like to use coconut oil instead of butter or vegetable oil. Coconut oil helps prevent the mixture from sticking too much, but it also doesn’t remain too oily once it’s done.
Some things to remember. I note in the recipe to chop the nuts VERY roughly. If the nuts are chopped too small, they’ll burn in the oven. Plus, the larger pieces add a nice texture to the final product.
It’s also important to use parchment paper when you’re toasting up this granola. This prevents the mixture from sticking to the pan, and it makes clean-up a breeze!
I like to serve this granola with Greek yogurt and berries, but it’s yummy to grab a handful on the go, too! I would love to hear what you think about it!
