Farro is one of those grains that just does not get enough love, in my opinion. I love the chewy dense texture, plus it’s packed full of great-for-you nutrients!
Some things to love about farro.
Zinc: It contains 15% of your daily Zinc recommendation. Zinc is an essential trace mineral that our body doesn’t readily store, so we must eat it often to obtain the maximum benefits. One of the main benefits of zinc is that it helps our immune system by fighting off bacteria and viruses.
Magnesium: Farro also contains 15% of the daily recommended value of magnesium, important for many of the body’s processes, including protein synthesis and regulating muscle and nerve function.
Farro is also loaded with fiber and protein, so really you can’t go wrong!
If you’ve spent any time around me, you know that I’m a big fan of make-ahead meals AND using grains that can serve as a blank canvas for so many flavors. Farro is one of those foods.
I also still had JUST enough basil left in my garden to eek out some pesto sauce, so it just seemed fitting to make a pesto for this dish. I love the combination of sun dried tomatoes and pesto and my family loves shrimp, so a star was born!
