Begin my mixing together the cornmeal, cassava flour, salt, pepper, paprika, garlic powder, and ground mustard seed.

Next, whisk together the 2 eggs until they are smooth.

Set up your breading station by placing chicken tenders in one dish, the eggs in another dish, and the cornmeal mixture in a 3rd dish.

Place chicken tenders in the egg mixture, and toss until well coated.

Once the chicken has been coated in the egg, toss in the cornmeal mixture until completely covered.

Lay the chicken tenders in a single layer on a lined baking sheet.

Place in the air fryer that has been preheated to 390 degrees F. Cook for 12-15 minutes, or until they reach 165 degrees F.
