Gluten Free Pasta Bake with Butternut Squash

What you need to get started

3 cups butternut squash, peeled and cut into 1-inch cubes.

You will also need your favorite gluten free pasta. I like to use penne pasta for this dish. Start the dish, by cooking the pasta.

Minced garlic and minced shallots

Paprkia, salt, and pepper

You'll also need cornstarch, whole milk, vegetable broth, and cheddar and gruyere cheeses.

For the sauce, saute the garlic and shallot. Add the seasonings, then the cornstarch. Whisk in the milk and vegetable broth.

While the pasta and sauce cook, cook the butternut squash. Once everything is prepared, stir everything together, and place in a lightly greased baking dish.

To make the topping, stir together melted butter, gluten free panko bread crumbs, parmesan cheese, and thyme.

Top the pasta bake with the bread crumb mixture, and place in the oven. Bake until golden brown and bubbly!
