Gluten Free Double Chocolate Chip Cookies

Begin with the ingredients

Melt the butter and whisk with cocoa powder until smooth.

Cream together the sugar with the cocoa mixture. Add the eggs, and vanilla extract. 

Remaining cookie ingredients:

Add the flour, salt, baking soda, and chocolate chips, mixing until combined.

Scoop the cookie dough, and arrange on a parchment-lined baking sheet. Chill for at least 1 hour.

When ready to bake, preheat the oven to 375°F. Place the dough balls about 2 inches apart, and bake for 12-15 minutes.

Let cool for about 10 minutes before transferring to a wire cooling rack.
