Gluten Free Peppermint Brownie Cookies

Melt together the butter and semi-sweet chocolate chips.

Once the butter and chocolate are melted together, add the cocoa powder, and stir to combine.

Next, combine the eggs, sugar, and vanilla and peppermint extracts to the mixer. Whip on high until fluffy and pale.

Once the egg mixture is whipped, add the chocolate mixture, and whisk until combined.

Replace the whisk with the paddle attachment. Add the dry ingredients to the mix, and mix just until combined, scraping down the bowl, if needed.

Add the crushed peppermints and chocolate chips, mixing just until combined.

Scoop the dough, using a 1 tablespoon scoop. (Dough can either be frozen or baked right away. No chilling necessary.)

Bake at 350 degrees for about 5-8 minutes, rotating halfway through baking.
