The BEST Oreo Cheesecake (Gluten Free!)

For the crust, you will need:

- Gluten Free Oreos - Melted unsalted butter - Granulated sugar -Coarse Kosher salt

For the filling, you will need:

- Gluten Free Oreos - Softened cream cheese - Sour cream - Granulated sugar - Whole eggs - Vanilla extract - Coarse Kosher salt

Place the Oreos, melted butter, sugar, and salt into a food processor.

Begin by making the crust:

Process the crust mixture until smooth, but not like a fine powder. You still want to have some texture to the crust!

Press the crust mixture into an 8-inch greased springform pan. Bake at 350 degrees F for about 8-10 minutes, or until just set.

Cream together the granulated sugar, cream cheese, and sour cream in the bowl of a stand mixer. Beat the mixture until smooth, scraping down the bowl as needed.

Next, make the filling:

Add the eggs, one at a time, scraping the bowl as needed. Then, add the vanilla extract, and Kosher salt., mixing until combined.

Finally, add roughly chopped Gluten free Oreos to the mixture, and mix gently, until JUST combined.

Finally, gently scrape down the bowl one more time, ensuring that all the ingredients are well mixed.

Once the cake batter is made, wrap aluminum foil around the base of the cake pan, and place in a larger pan or baking sheet.

Pour the cake batter over the crust, and then fill the larger pan with enough water to reach about 1-inch of cake pan. Place in a 300 degree F oven, and bake for about 40-45 minutes.

Check the cake about halfway through baking, and loosely place a piece of foil over the top of the cake, to create a tent. This helps prevent the cake from browning too much.

Once the cake has baked, turn the oven off, and leave the cake in the oven to cool for about 2 hours. This prevents the top of the cake from cracking!

Once the cake has cooled to room temperature in the oven, place in the refrigerator for at least 4 hours to cool completely. The cake is best when chilled overnight.
