These Monster Cookie Protein Balls are filled with everything that is right about a Monster Cookie. There is peanut butter, oats, M&M's, and chocolate chips, all rolled into a healthy, protein packed ball. All you need is 8 ingredients and 20 minutes to make!

Ingredients
  

  • ¾ cup creamy natural peanut butter (the kind that needs to be stirred together and is unsweetened)
  • ¼ cup honey
  • 1 tablespoon vanilla extract
  • cup gluten free rolled oats
  • cup vanilla protein powder
  • ½ teaspoon coarse Kosher salt
  • ¼ cup mini chocolate chips
  • ¼ cup mini M&M’s

Instructions
 

  • In a medium sized mixing bowl, whisk together the peanut butter, honey, and vanilla extract.
  • Add the oats, protein powder, and salt. Use a rubber spatula, and stir to combine.
  • Once well combined, fold in the mini chocolate chips and mini M&M’s. You may need to use your hands to combine the ingredients evenly.
  • Once the mixture is well combined, scoop onto a parchment paper lined baking sheet, using a 1-tablespoon sized cookie scoop. Ensure the mixture is completely filling and slightly mounded in the scoop.
  • Once the protein balls are scooped, roll into a smooth, even balls. Store in an airtight container, at room temperature, for up to 1 week.
