Have you ever had “Mexican street corn”. It is delicious and creamy, and one of the greatest inventions ever. My roommate in culinary school used to make this, and I thought it was super strange. Then I tasted it, and realized that she was basically a genius!
This play on Mexican street corn has a Southern twist with the addition of roasted okra. It’s the perfect side dish to add to any picnic or just an easy summer dinner!
Sometimes, I use frozen, sliced okra just to make my life easier. BUT, right now, we have the most beautiful okra growing in our garden, so that is what we’re going with!
