Now that it’s September, I’m holding onto the warmth of summer, BUT I’m also trying to embrace the flavors of fall. Plus, I adore a good Cobb salad. I decided to create my own version for these warm fall days.
What you will need for this Autumn Cobb Salad:
- Salt and pepper – always!
- Extra virgin olive oil
- Blue cheese
- White wine or champagne vinegar
- Dijon mustard
- Garlic powder
- Honey
- Butternut Squash
- Apples
- Hard-boiled eggs
- Cooked chicken breast – you could even use a rotisserie chicken to save some time!
- Mixed greens – or your lettuce of choice
- Bacon slices
- Avocado
- Pecans
To make this salad:
- You’ll want to be sure to make this vinaigrette ahead of time.
- Don’t forget to preheat your oven for the squash and apples!
- Watch your apples closely! If you cook them too long, you will have chewy, inedible apple chips.
