    Creamy Goat Cheese Polenta

    Creamy and delicious, this goat cheese polenta is super simple and will be a welcome side dish at any dinner table! It's perfect for a simple weeknight or a festive holiday dinner. Plus, it only takes minutes to make!

    Here in the South, we love our grits. It’s only fitting that since I’m southern and Italian that I would love polenta! It’s one of the most simple side dishes that can be made ahead of time or just before serving. Polenta can also serve as the base for a veggie bowl filled with a rainbow of roasted vegetables. 

    I love adding goat cheese to polenta, because, well, is there any cheese better? I know this is debatable, but every member of my family gobbles up this goat cheese polenta, so it’s a clear winner! 

    I recently posted my recipe for Italian Braised Beef and Olives, and this goat cheese polenta was the perfect base for this dish. I often make a twist on Shrimp and Grits and serve it with polenta as well.

    WHAT DO I NEED TO MAKE GOAT CHEESE POLENTA?

    Ingredient bowls with crumbled goat cheese, dry, uncooked polenta, milk, vegetable broth, salt, pepper, and garlic powder
    • Polenta
    • Milk
    • Water
    • Vegetable broth
    • Coarse Kosher salt
    • Black pepper
    • Garlic powder
    • Goat cheese

    HOW DO I MAKE GOAT CHEESE POLENTA?

    Bring vegetable broth, milk, water, salt, pepper, garlic powder, and butter to a boil in a small saucepan over medium high heat. Stir in polenta, and reduce heat to low. Stirring often. Let cook until most of the liquid is absorbed, and the polenta is tender and creamy, but not dry. 

    Remove polenta from the heat, and stir in the goat cheese until melted. Serve right away or let cool, and store in an airtight container in the refrigerator for up to one week.

    HOW DO I MAKE EXTRA CREAMY POLENTA?

    • If you are making the polenta ahead of time, you will need to add about ½ cup of milk, water, or vegetable broth to the polenta when you reheat it. 
    • The polenta can be placed in a saucepan over low heat. Add the ½ cup of liquid of your choice to the pan with polenta, and stir with a rubber spatula, until heated through.
    • To reheat the polenta in the microwave, place the ½ cup of your choice of liquid to the microwave safe bowl or container along with the polenta, and reheat for one minute. Stir together, and reheat for 30-60 seconds at a time, stirring between each reheating cycle to ensure the liquid is evenly mixed and the polenta does not become tough or clumpy.
