You can’t beat a great pizza, but you also can’t beat a great flatbread! I love a blank canvas kind of meal, where you can just top something with whatever you like. It’s one of the many reasons I love quinoa bowls, and now it’s one of the many reasons I love flatbread!
This dough comes together in just a few minutes, is yeast free, so requires no rise time, and the final product is a light and fluffy flatbread!
I decided to go with caramelized onions and figs because they are just so dang good. You can easily add some greens to this at the last minute to get your full veggie fix. I didn’t happen to have any, so I left them off. It was equally delicious!
This dough will make about 4 8-inch flatbreads, so you have dinner for the whole family, and possibly even lunch!

You can also use the flatbread dough as a wrap option. It would make an awesome Greek chicken salad wrap with tzatziki sauce and cucumbers!
